Muffin Batter
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
Streusel Topping
- 1/2 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/4 cup unsalted butter, cold and cubed
- 1/2 teaspoon ground cinnamon
- Prepare Muffin Batter: In a large mixing bowl, mash the ripe bananas until smooth. Add the melted butter, sugar, egg, and vanilla extract, and mix until well combined. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture, stirring gently until just combined without overmixing.
- Fill Muffin Cups: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly. Spoon the batter evenly into the muffin cups, filling each about two-thirds full.
- Make Streusel Topping: In a small bowl, combine the flour, sugar, and cinnamon. Add the cold cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Add Streusel and Bake: Sprinkle the streusel topping generously over each muffin. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Use very ripe bananas for maximum sweetness and moisture.
- Do not overmix the batter; some lumps are okay to keep muffins tender.
- Streusel topping can be made ahead and stored in the refrigerator.
- For a healthier version, substitute half the all-purpose flour with whole wheat flour.
- Muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for longer storage.
