Instructions

  1. Prepare the Gelatin: In a small bowl, sprinkle the gelatin powder over 1/4 cup of cold milk to let it bloom for 5 minutes.
  2. Heat Milk and Sugar: In a saucepan over medium heat, warm the remaining milk and sugar together, stirring until the sugar dissolves and milk is hot but not boiling.
  3. Combine Gelatin with Milk Mixture: Remove milk mixture from heat and whisk in the bloomed gelatin until completely dissolved.
  4. Cool the Mixture: Allow the milk and gelatin mixture to cool to room temperature, stirring occasionally to prevent a skin from forming.
  5. Fold in Whipped Cream: Gently fold the whipped cream into the cooled milk mixture until fully incorporated and smooth.
  6. Chill to Set: Pour the Bavarian cream into individual serving glasses or a large bowl and refrigerate for at least 4 hours, or until firm.
  7. Top with Berries: Just before serving, top the set Bavarian cream with a generous amount of fresh mixed berries.
