Instructions

  1. Prepare Toffee Base: In a heavy-bottomed saucepan, melt the butter over medium heat. Once melted, add the granulated sugar and stir continuously to combine.
  2. Cook the Toffee: Continue cooking the butter and sugar mixture over medium heat, stirring constantly to prevent burning. Cook until the mixture reaches a deep amber color and a hard ball stage (approximately 300°F or 149°C) on a candy thermometer. This process usually takes about 10-15 minutes.
  3. Pour the Toffee: Immediately pour the hot toffee mixture onto a greased or parchment-lined baking tray and spread it evenly into a rectangular shape. Be careful as the mixture will be extremely hot.
  4. Add Chocolate and Nuts: While the toffee is still hot, sprinkle the chocolate chips evenly over the surface. Allow the chocolate to sit for a few minutes until it softens, then spread it evenly over the toffee using an offset spatula or the back of a spoon. Next, sprinkle the chopped nuts evenly on top of the melted chocolate.
  5. Cool and Set: Let the toffee cool completely at room temperature or place it in the refrigerator for faster setting, about 30-45 minutes, until the chocolate hardens.
