Ingredients

Scale

Chicken

  • 2 blackened chicken breasts (or thighs)

Buns & Cheese

  • 2 kaiser buns
  • 1 ounce Colby Jack cheese (sliced)
  • 1 tablespoon butter

Vegetables & Toppings

  • 2 leaves romaine lettuce
  • 1/4 cup sliced onion
  • 1/2 avocado (sliced)

Sandwich Sauce

  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon blackened seasoning
  • 2 teaspoons lemon juice

Instructions

  1. Prepare the sandwich sauce: In a bowl, whisk together mayonnaise, ketchup, blackened seasoning, and lemon juice until well combined. Cover and refrigerate the sauce until ready to assemble the sandwich to allow flavors to meld.
  2. Heat the chicken: If you are using leftover blackened chicken, warm a skillet over medium heat. Place the chicken in the skillet and cook for 1-2 minutes on each side until heated through. Remove from skillet and set aside.
  3. Toast the buns: In the same skillet, melt the butter over medium heat. Place the cut sides of the kaiser buns down in the skillet and cook until they are toasted and golden brown. Remove from skillet and set aside.
  4. Assemble the sandwich: Spread a generous amount of the prepared sandwich sauce onto the bottom half of each bun. Layer with the heated blackened chicken, a slice of Colby Jack cheese, romaine lettuce leaves, sliced onion, and avocado slices. Top with the other half of the bun.
  5. Serve immediately: Enjoy the Blackened Chicken Sandwich fresh and warm, capturing a delicious combination of smoky, creamy, and fresh flavors.

Notes

  • Blackened seasoning typically includes paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and black pepper—feel free to adjust spice levels to your taste.
  • For juicier chicken, use thighs instead of breasts; cooking times remain the same.
  • Can substitute kaiser buns with any other sandwich rolls or brioche for a different texture.
  • If you prefer, you can add pickles or tomato slices for extra freshness.
  • The sandwich sauce can be made a day ahead to let the flavors develop even more.
