Ingredients

Scale

Brownies

  • 1 batch of your favorite brownie batter (approximately 1 ½ cups)

Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups semi-sweet chocolate chips

Chocolate Drizzle

  • ½ cup semi-sweet chocolate chips
  • 1 teaspoon vegetable oil (optional, for smoother melting)

Instructions

  1. Prepare Brownies: Preheat your oven to 350°F (175°C). Prepare the brownie batter according to your favorite recipe or box instructions. Pour the batter evenly into a greased baking pan and bake for 20–25 minutes or until a toothpick inserted in the center comes out with moist crumbs. Remove from oven and allow to cool completely.
  2. Make Cookie Dough: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs and vanilla extract and mix well. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and stir until combined. Fold in the chocolate chips.
  3. Assemble Sandwiches: Spread a generous, even layer of cookie dough over the cooled brownies. Using a spatula, press the cookie dough gently to create a flat surface.
  4. Chill: Place the assembled brownie and cookie dough layer in the refrigerator and chill for at least 2 hours or until firm enough to slice cleanly.
  5. Slice and Drizzle Chocolate: Remove the chilled layered dessert from the refrigerator and slice into individual sandwich-sized squares or rectangles. Melt the semi-sweet chocolate chips with the vegetable oil in a microwave-safe bowl in 20-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the sliced sandwich cookies for an elegant finish.
  6. Serve and Store: Allow the chocolate drizzle to set before serving. Store leftover sandwich cookies in an airtight container in the refrigerator for up to 5 days.

Notes

  • For best results, ensure the brownies are completely cooled before adding the cookie dough layer to prevent melting.
  • If you prefer a firmer cookie dough, chill it in the refrigerator for 30 minutes before spreading on the brownies.
  • You can substitute semi-sweet chocolate chips with dark or milk chocolate chips depending on preference.
  • Use parchment paper in the baking pan to easily lift out the brownies.
  • These sandwich cookies can also be frozen for up to 3 months; thaw in the refrigerator before serving.
