Cheese Mixture

  • 15 ounces ricotta cheese (drained)
  • 8 ounces mascarpone cheese (cream cheese can be substituted)

  • 1 ¼ cup powdered sugar (sifted)
  • 1 ½ teaspoons vanilla extract

Add-ins and Garnish

  • ¾ cup mini semi-sweet chocolate chips
  • Pizzelle cookies, graham crackers, chocolate chip cookies, broken waffle cones, strawberries, broken cannoli shells, etc. (for dipping)

Instructions

  1. Mix cheeses: Combine ricotta cheese and mascarpone cheese together in a medium mixing bowl. Using a hand mixer, beat on medium-high speed for several minutes until the mixture is smooth and creamy.
  2. Add sugar and vanilla: Add powdered sugar and vanilla extract to the cheese mixture. Start mixing on low speed to avoid powdered sugar flying everywhere, then increase speed and beat until the mixture is well combined and smooth.
  3. Fold in chocolate chips and chill: Gently fold in all but two tablespoons of the mini semi-sweet chocolate chips to the mixture. Cover the bowl and refrigerate until ready to serve. For best flavor and texture, chill for at least 1 hour; however, it can be served after 15 minutes if needed.
  4. Garnish and serve: Just before serving, sprinkle the reserved two tablespoons of chocolate chips on top of the dip. Optionally, dust with a bit of powdered sugar. Serve with your choice of dippers such as pizzelle cookies, graham crackers, chocolate chip cookies, broken waffle cones, strawberries, or broken cannoli shells.
