Instructions

  1. Prepare the mushrooms: Preheat your oven to 375°F (190°C). Clean the mushrooms by wiping them with a damp cloth and carefully remove the stems, setting the caps aside for stuffing.
  2. Caramelize the onions: In a large skillet, melt the butter over medium heat. Add the thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for about 25-30 minutes until the onions are deeply golden brown and sweetly caramelized. Season with pepper.
  3. Make the filling: Chop the reserved mushroom stems finely and add them to the caramelized onions. Stir to combine and cook for an additional 2-3 minutes until the stems soften. Remove from heat and let cool slightly. Mix in half of the grated Gruyère cheese.
