Chicken
- 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
Sauce
- 1/4 cup (60ml) soy sauce
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp brown sugar
- 1 tbsp vegetable oil
Rice
- 1 cup (185g) jasmine or long-grain rice
- 2 cups (480ml) water
- Prepare the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch. In a pot, combine the rice with 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- Make the Sauce: In a bowl, mix the soy sauce, minced garlic, grated ginger, and brown sugar until the sugar is dissolved to create the caramelizing sauce.
- Cook the Chicken: Heat the vegetable oil in a skillet over medium-high heat. Add the chicken pieces and cook until they are lightly browned on all sides, about 4-5 minutes.
- Simmer with Sauce: Pour the soy sauce mixture over the browned chicken. Reduce heat to medium and let it simmer, stirring occasionally, until the sauce thickens and becomes caramelized, coating the chicken evenly, about 8-10 minutes.
- Serve: Fluff the cooked rice with a fork and serve the caramelised soy chicken over the rice while hot.
