Chicken Mixture
- 1 1/2 lb (700g) skinless, boneless chicken breast, finely diced
- 2 medium eggs
- 1/3 cup almond flour or coconut flour
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese (optional)
- 3 jalapeño peppers, seeded and finely diced
- 1 spring onion, sliced (+ extra for garnish)
- 2 tablespoons parsley, chopped
- 1/2 teaspoon garlic powder
- A pinch of salt and fresh ground black pepper
For Frying
- Prepare the mixture: In a large bowl, combine the finely diced chicken, almond or coconut flour, eggs, shredded mozzarella, grated parmesan (if using), sliced spring onion, diced jalapeño peppers, chopped parsley, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
- Heat the pan: Place a large non-stick pan on the stove over medium-low heat and add the olive oil. Allow the oil to warm gently without smoking to ensure even frying.
- Shape and cook fritters: Use an ice cream scoop or a large spoon to portion the chicken mixture into the pan. Slightly flatten each scoop to form fritters. Avoid overcrowding the pan; cook in batches if necessary to allow proper heat circulation.
- Fry until golden: Cook the fritters for about 6-8 minutes, flipping carefully to brown both sides evenly. Maintain medium-low heat so the fritters cook through inside without burning on the outside.
- Serve: Once golden and cooked through, transfer the fritters to a plate. Garnish with additional sliced spring onion. Serve immediately with your favorite dips like mayonnaise, chipotle aioli, Sriracha, or ketchup. Enjoy your cheesy chicken fritters!
Notes
- Use medium-low heat to ensure the fritters cook completely inside without burning outside.
- Jalapeño peppers can be adjusted or omitted based on your preference for spice level.
- Almond flour can be substituted with coconut flour for a slightly different texture and flavor.
- Cooking in batches prevents overcrowding and helps achieve a crispy exterior.
- Store leftovers in an airtight container in the refrigerator for up to 2 days; reheat in a skillet to retain crispiness.
