Instructions

  1. Prepare the Brioche Dough: In a mixing bowl, combine warm milk, yeast, and a teaspoon of sugar. Let it bloom for 5-10 minutes until frothy. Add flour, sugar, salt, and eggs, then knead until a smooth dough forms. Gradually incorporate softened butter and continue kneading until elastic. Cover and let rise in a warm spot until doubled in size, about 1.5 to 2 hours.
  2. Make the Vanilla Custard: In a saucepan, heat milk until just simmering. In a bowl, whisk egg yolks, sugar, cornstarch, and salt until smooth. Slowly pour hot milk into the egg mixture while whisking constantly to temper. Return mixture to saucepan and cook over medium heat, whisking until thickened. Remove from heat, stir in vanilla extract, and cool completely.
  3. Shape the Brioches: Punch down the risen dough and divide it into equal portions. Flatten each portion into a disc and place a spoonful of cooled vanilla custard and chocolate chips in the center. Fold the dough around the filling, sealing edges well. Place shaped brioches on a parchment-lined baking tray.
  4. Apply Egg Wash: Lightly beat one egg with a tablespoon of water. Brush the tops of the brioches gently with the egg wash to give a shiny, golden finish.
