  • 3 large eggs
  • 1/2 cup (120ml) brewed strong coffee, cooled

Crust

  • 1 1/2 cups (150g) graham cracker crumbs
  • 1/4 cup (50g) granulated sugar
  • 6 tbsp (85g) unsalted butter, melted

Instructions

  1. Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until the mixture is evenly moistened. Press this firmly and evenly into the bottom of a 9-inch springform pan to form the crust.
  2. Make the filling: In a large bowl, beat the softened cream cheese with sugar until smooth and creamy. Add the eggs one at a time, mixing thoroughly after each addition. Gradually blend in the cooled brewed coffee until well combined and smooth.
  3. Assemble and bake: Pour the coffee cream cheese filling over the prepared crust in the springform pan. Smooth the top with a spatula. Bake in a preheated oven at 325°F (163°C) for about 50-60 minutes until the center is set but still slightly jiggly.
