These Cottage Cheese Egg Bites are a creamy, protein-packed breakfast or snack option. Made with simple ingredients like eggs and cottage cheese, they blend into a smooth mixture that’s baked until set, creating fluffy, flavorful bites perfect for meal prepping or a quick healthy treat.

Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)

Instructions

  1. Prepare the Egg Blend: In a blender, combine the eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until the mixture is smooth and well combined, ensuring the cottage cheese breaks down for a creamy texture.
  2. Pour into Molds: Lightly grease a muffin tin or silicone molds. Pour the blended egg mixture evenly into the molds, filling each about three-quarters full to allow room for rising.
  3. Bake until Set: Preheat your oven to 350°F (175°C). Place the filled molds on a baking tray and bake for about 20 to 25 minutes, or until the egg bites are puffed up and a toothpick inserted into the center comes out clean. Remove from the oven and let cool slightly before removing from molds.

Notes

  • You can customize these egg bites by adding finely chopped vegetables or cooked meats before baking.
  • Use a blender to achieve the smoothest texture, but whisking vigorously by hand also works.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Reheat gently in the microwave or oven before serving.
