- Prepare the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
- Sauté the vegetables: While the pasta cooks, heat olive oil or butter in a large skillet over medium heat. Add the sliced leeks and cook for about 3-5 minutes until softened. Add the mushrooms and minced garlic and continue cooking for another 5-7 minutes until mushrooms are tender and any liquid has evaporated.
- Combine pasta and vegetables: Add the drained pasta to the skillet with the sautéed vegetables. Toss well to combine.
- Add the Gruyere cheese: Sprinkle the shredded Gruyere over the pasta and vegetables. Stir continuously off the heat to allow the cheese to melt evenly and coat the pasta. If the mixture seems dry, add a splash of the reserved pasta water to create a creamy sauce.
- Season and serve: Season with salt and freshly ground black pepper to taste. Serve immediately for best flavor and texture.
