Instructions

  1. Preheat and prepare ingredients: Preheat your oven to 400°F (200°C). Wash the tomatoes and garlic cloves, keeping the garlic unpeeled.
  2. Roast feta and tomatoes: On a baking sheet, place the block of feta cheese in the center. Surround it with halved tomatoes and the whole garlic cloves. Drizzle everything with olive oil and sprinkle oregano and thyme over the top. Roast in the oven for 20-25 minutes, until the tomatoes have softened and started to caramelize and the feta is golden on the edges.
  3. Sauté garlic (optional step): Remove the garlic from the oven and let cool slightly. Squeeze the roasted garlic out of its skins. In a large pot on the stovetop, heat a little olive oil over medium heat and sauté the roasted garlic for 1-2 minutes to release its flavor.
  4. Blend the soup base: Transfer the roasted tomatoes and feta into a blender or use an immersion blender in the pot. Add the sautéed garlic and pour in the broth. Blend until smooth and creamy, adjusting thickness by adding more broth if desired.
  5. Heat through and season: Pour the blended soup back into the pot and gently heat over medium heat until warmed through but not boiling. Season with salt and freshly ground black pepper to taste.
  6. Serve: Ladle the soup into bowls and garnish with a drizzle of olive oil or fresh herbs if desired. Serve hot with crusty bread for dipping.
