Ingredients

Scale

Pasta

  • 8 oz pasta (penne, fettuccine, or linguine)

Vegetables and Herbs

  • 1.5 cups fresh mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup fresh spinach
  • fresh basil, for garnish

Dairy and Oils

  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 0.5 cup freshly grated Parmesan cheese

Seasonings

  • salt, to taste
  • black pepper, to taste

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until it is al dente. Drain the pasta and set it aside for later use.
  2. Sauté Mushrooms: Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook them for 5 to 7 minutes, stirring occasionally, until they become golden brown and tender.
  3. Add Garlic and Spinach: Stir in the minced garlic and cook for 30 to 60 seconds until fragrant. Next, add the fresh spinach and cook just until it wilts, combining the flavors.
  4. Create the Cream Sauce: Pour the heavy cream into the skillet and bring the mixture to a gentle simmer. Stir in the freshly grated Parmesan cheese, continuing to stir until the cheese melts and the sauce becomes smooth and creamy.
  5. Toss Pasta in Sauce: Add the cooked pasta directly to the skillet. Toss everything together until the pasta is evenly coated with the creamy mushroom sauce. Season the dish with salt and black pepper to your taste.
  6. Serve and Garnish: Remove the skillet from heat. Garnish the pasta with fresh basil leaves and extra Parmesan cheese if desired. Serve immediately while hot and enjoy.

Notes

  • To make the dish vegetarian, ensure the Parmesan cheese used is suitable for vegetarians.
  • For a lighter version, substitute heavy cream with half-and-half, though the sauce will be less rich.
  • Use fresh mushrooms such as cremini or button for best flavor.
  • Adding a pinch of crushed red pepper flakes can add a spicy kick.
  • Leftovers can be refrigerated for up to 2 days and reheated gently on the stovetop.
