Pasta

  • 4 cups chicken broth

Ricotta

  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Garlic

  • 3 cloves garlic, minced

Instructions

  1. Prepare the chicken: Heat olive oil in a large pot over medium heat. Season the chicken pieces with salt and pepper, then add them to the pot. Cook until golden and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  2. Cook the pasta and garlic: In the same pot, add minced garlic and sauté for 1-2 minutes until fragrant. Add the dry pasta and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until the pasta is al dente, about 10-12 minutes and most of the broth is absorbed.
  3. Add chicken back: Return the cooked chicken to the pot with the pasta and stir to combine.
  4. Whip the ricotta: In a bowl, whip the ricotta cheese with grated Parmesan, salt, and pepper until smooth and fluffy.
  5. Combine and serve: Stir the whipped ricotta into the pasta and chicken mixture until well incorporated and creamy. Adjust seasoning as needed and serve warm.
