  • 8 (6 inch) flour tortillas
  • 2 to 3 cups mozzarella cheese, shredded

Instructions

  1. Sauté Onions: Heat about 1 tablespoon of oil in a large skillet over medium heat. Add the finely chopped onions and cook until softened, about 2-3 minutes.
  2. Cook Ground Beef: Add the ground beef to the skillet. Break it up with a large spoon and cook until most of the beef is browned, approximately 4-5 minutes.
  3. Season Beef: Mix in the tomato paste and taco seasoning. Stir in water or beef broth if needed to prevent dryness. Continue cooking until the beef is fully cooked and most of the liquid has evaporated, about 3-4 minutes. Season with salt to taste. Remove from heat and let cool slightly.
  4. Assemble Tacos: Lay a tortilla on a clean surface. Add 1½ to 2 tablespoons of shredded mozzarella on the top half, spoon a portion of the beef filling over the cheese, then top with another 1½ to 2 tablespoons of mozzarella cheese. Fold the bottom half of the tortilla over the filling and press gently to seal.
  5. Repeat Assembly: Place the assembled tacos on a large baking sheet. Repeat the process with remaining tortillas, cheese, and beef filling until you have 8 tacos.
  6. Fry Tacos: Heat 3-4 tablespoons of oil in a large skillet over medium heat. Fry the tacos in batches for about 1 minute on each side or until golden brown and crispy. Add more oil as needed between batches. Transfer fried tacos to a wire cooling rack set over a baking sheet to drain excess oil.
