Truffle Base
- 1 1/2 cups Biscoff cookies, finely crushed
- 8 oz (225 g) cream cheese, softened
Chocolate Coating
- 8 oz (225 g) semi-sweet or milk chocolate, melted
- Prepare Cookie Mixture: In a large bowl, combine the finely crushed Biscoff cookies and softened cream cheese. Mix thoroughly until a uniform dough-like consistency is achieved.
- Form Truffles: Using your hands or a small scoop, roll the mixture into 1-inch balls. Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Melt Chocolate: Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring between each until smooth and fully melted. Alternatively, use a double boiler on the stovetop.
- Dip Truffles: Using a fork or dipping tool, dip each chilled truffle into the melted chocolate, ensuring it is fully coated. Allow excess chocolate to drip off.
- Set Truffles: Place the coated truffles back onto the parchment-lined baking sheet. Refrigerate for another 30 minutes or until the chocolate coating hardens completely.
Notes
- Store the truffles in an airtight container in the refrigerator for up to one week.
- For a decorative touch, drizzle contrasting chocolate over the coated truffles once set.
- Use either milk, semi-sweet, or dark chocolate based on your sweetness preference.
- Allow the cream cheese to soften at room temperature before mixing to ensure an even texture.
