4.7 from 408 reviews

Buckeye Graham Crackers are a simple and delightful treat combining the crunch of graham crackers, creamy peanut butter, and a rich chocolate coating. This no-bake recipe is perfect for quick snacks or party appetizers and mimics the classic flavors of buckeye candies in a convenient cracker form.

Ingredients

Scale

Graham Crackers

  • 12 whole graham crackers

Peanut Butter Filling

  • 1 cup creamy peanut butter
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar

Chocolate Coating

  • 12 oz semisweet chocolate chips
  • 1 tablespoon vegetable oil or coconut oil

Instructions

  1. Prepare the Peanut Butter Filling: In a mixing bowl, combine the creamy peanut butter, softened unsalted butter, and powdered sugar. Mix until smooth and well incorporated, forming a thick and spreadable peanut butter filling.
  2. Assemble Buckeye Crackers: Break each graham cracker into halves or quarters if preferred. Spread a generous layer of the peanut butter filling on one side of each graham cracker piece.
  3. Chill the Assembled Crackers: Place the peanut butter–topped graham crackers on a baking sheet lined with parchment paper and refrigerate for about 15-20 minutes to firm up the filling.
  4. Melt the Chocolate: In a microwave-safe bowl, combine the semisweet chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
  5. Dip Crackers in Chocolate: Using a fork or dipping tool, dip each peanut butter–spread graham cracker piece into the melted chocolate, ensuring it is fully coated. Let the excess chocolate drip off before placing back onto the parchment-lined sheet.
  6. Set the Coated Crackers: Refrigerate the chocolate-coated buckeye graham crackers for about 30 minutes or until the chocolate is fully set and firm.
  7. Serve and Enjoy: Once set, serve the buckeye graham crackers as a delicious snack or dessert. Store leftovers in an airtight container in the refrigerator for up to a week.

Notes

  • Use creamy peanut butter for the smoothest filling consistency.
  • For a healthier option, use dark chocolate with at least 70% cocoa.
  • If the chocolate thickens too much while dipping, gently reheat it to maintain a smooth texture.
  • You can customize the topping by sprinkling crushed peanuts or sea salt on the chocolate before it sets.
  • Make sure to refrigerate after chocolate coating to ensure a clean, crisp snap.
