Instructions

  1. Toast the nuts: Heat a dry pan over low heat and gently toast the pine nuts or cashews until they become fragrant and slightly golden, stirring frequently to avoid burning. Remove from heat and let them cool.
  2. Combine ingredients: Place the toasted nuts, picked basil leaves, chopped garlic, and parmesan cheese into a mini chopper or large pestle and mortar.
  3. Blend or pound: Blitz the ingredients briefly in the mini chopper or pound using the mortar and pestle until a rough sauce forms, gradually adding the olive oil to bind the pesto and achieve your desired consistency.
  4. Store properly: Transfer the pesto into a clean airtight container and refrigerate. It will keep fresh for up to three days.
