Instructions

  1. Prepare the egg mixture: In a bowl, whisk together the eggs, salt, and pepper until fully combined.
  2. Cook the eggs: Heat a non-stick skillet over medium heat, lightly greased with cooking spray or oil. Pour the egg mixture into the skillet and cook gently, stirring occasionally, until softly scrambled but not dry. Remove from heat.
  3. Assemble the quesadillas: Lay out the tortillas on a clean surface. Evenly distribute the scrambled eggs, shredded cheese, and your choice of fillings (such as cooked sausage, bell peppers, onions, and spinach) onto one half of each tortilla. Fold the tortillas over to form a half-moon shape.
  4. Cook the quesadillas: Wipe the skillet clean if needed and return to medium heat. Place each folded quesadilla in the skillet and cook for 2-3 minutes per side until the tortilla is golden brown and the cheese has melted. Adjust heat as necessary to avoid burning.
