Ingredients

Scale

Tortillas

  • 4 large flour tortillas

Filling

  • 8 oz (225 g) cream cheese, softened
  • 1 cup mixed vegetables, finely chopped (such as bell peppers, cucumbers, carrots, and celery)
  • Salt and pepper to taste
  • Optional: fresh herbs like parsley or chives, finely chopped (2 tablespoons)

Instructions

  1. Prepare the filling: In a medium bowl, combine the softened cream cheese with the finely chopped mixed vegetables. Add salt and pepper to taste, and mix well to combine. If using, fold in the fresh herbs for added flavor.
  2. Spread the filling: Lay one tortilla flat on a clean surface and evenly spread a quarter of the cream cheese and vegetable mixture over the entire surface, leaving a small border around the edges to prevent spilling during rolling.
  3. Roll tightly: Starting from one edge, carefully roll the tortilla into a tight log, ensuring the filling stays compact inside.
  4. Slice and serve: Using a sharp knife, slice the rolled tortilla into 1-inch thick pieces. Arrange the slices on a serving platter and serve immediately, or cover and refrigerate until ready to serve.

Notes

  • For best results, use fresh, crisp vegetables to maintain a nice crunch in the roll-ups.
  • Feel free to substitute cream cheese with flavored cheese spreads for variety.
  • These roll-ups can be prepared a few hours ahead and kept chilled, but slice just before serving to prevent drying out.
  • Whole wheat or gluten-free tortillas can be used to accommodate dietary preferences.
