Ingredients

Scale

For the Garlic Herb Chicken

  • 2 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1 tablespoon fresh herbs (such as thyme, rosemary, and parsley), chopped
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste

For the Mashed Potatoes

  • 4 medium potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1/4 cup milk or cream
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, minced garlic, and chopped herbs. Heat olive oil or butter in a skillet over medium heat, then cook the chicken for about 6-7 minutes per side or until fully cooked and golden brown.
  2. Cook the Potatoes: Place peeled and cubed potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.
  3. Mash the Potatoes: Return the potatoes to the pot. Add butter, milk or cream, salt, and pepper. Mash until smooth and creamy.
  4. Serve: Plate the garlic herb chicken alongside a generous portion of mashed potatoes. Garnish with extra herbs if desired.

Notes

  • For extra flavor, marinate the chicken for 30 minutes before cooking.
  • You can use garlic powder if fresh garlic is unavailable.
  • Adjust the herbs according to your preference.
  • For creamier mashed potatoes, add more butter and milk.
  • Use Yukon Gold potatoes for a naturally creamy texture.
