Scale
For the Garlic Herb Chicken
2 boneless, skinless chicken breasts
3 cloves garlic, minced
1 tablespoon fresh herbs (such as thyme, rosemary, and parsley), chopped
1 tablespoon olive oil or butter
Salt and pepper to taste
For the Mashed Potatoes
4 medium potatoes, peeled and cubed
2 tablespoons butter
1/4 cup milk or cream
Salt and pepper to taste
Instructions
Prepare the Chicken: Season the chicken breasts with salt, pepper, minced garlic, and chopped herbs. Heat olive oil or butter in a skillet over medium heat, then cook the chicken for about 6-7 minutes per side or until fully cooked and golden brown.
Cook the Potatoes: Place peeled and cubed potatoes in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.
Mash the Potatoes: Return the potatoes to the pot. Add butter, milk or cream, salt, and pepper. Mash until smooth and creamy.
Serve: Plate the garlic herb chicken alongside a generous portion of mashed potatoes. Garnish with extra herbs if desired.
Notes
For extra flavor, marinate the chicken for 30 minutes before cooking.
You can use garlic powder if fresh garlic is unavailable.
Adjust the herbs according to your preference.
For creamier mashed potatoes, add more butter and milk.
Use Yukon Gold potatoes for a naturally creamy texture.
