Ingredients

Scale

Main Ingredients

  • 8 ounces soba noodles
  • 3 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 teaspoon chili paste (optional, for heat)
  • 1/4 cup sesame seeds, toasted
  • 2 green onions, sliced for garnish
  • Fresh vegetables such as bell peppers, carrots, or snap peas (optional)

Instructions

  1. Cook the Soba Noodles: Bring a large pot of salted water to a boil. Add the soba noodles and cook according to package instructions (about 4-6 minutes) until tender but still slightly firm. Drain the noodles and rinse with cold water to stop the cooking process. Set aside.
  2. Prepare the Sauce: Heat sesame oil in a large skillet or wok over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, taking care not to burn it. Stir in soy sauce, rice vinegar, honey (or maple syrup), and chili paste if using. Cook for another 1-2 minutes to blend the flavors.
  3. Combine Noodles and Sauce: Add the cooked soba noodles to the skillet and toss them well in the garlic sesame sauce. If using fresh vegetables, add them now and toss together for an additional 1-2 minutes until heated through.
  4. Serve: Remove from heat, then sprinkle toasted sesame seeds and sliced green onions on top. Serve warm and enjoy your delicious Garlic Sesame Soba Noodles.

Notes

  • To make this dish vegan, substitute honey with maple syrup.
  • Toast sesame seeds in a dry skillet over medium heat for 3-4 minutes until golden and aromatic before adding as garnish.
  • Use fresh vegetables of your choice for added nutrition and crunch.
  • Drain and rinse soba noodles under cold water to prevent them from sticking together.
  • Adjust chili paste amount based on desired spice level or omit if you prefer a mild flavor.
