Ingredients

Scale

For the Gingerbread Dough

  • 3 cups all-purpose flour
  • 3/4 cup brown sugar, packed
  • 1 1/2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

For the Filling

  • 1/2 cup cranberry jam

Instructions

  1. Prepare the dough: In a large bowl, whisk together the flour, brown sugar, ginger, cinnamon, cloves, nutmeg, baking soda, and salt until well combined. In another bowl, beat the softened butter until creamy, then add the egg, molasses, and vanilla extract; mix until smooth. Gradually add the dry ingredients to the wet ingredients, mixing just until combined to form a soft dough.
  2. Chill the dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour to make it easier to handle and to enhance the flavors.
  3. Shape the cookies: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. Roll the chilled dough into 1-inch balls and place them spaced evenly on the prepared baking sheets.
  4. Create thumbprints: Using your thumb or the back of a small spoon, gently press an indentation into the center of each dough ball, being careful not to press all the way through.
  5. Add cranberry jam: Spoon about 1/2 teaspoon of cranberry jam into each indentation, filling it generously but not overflowing.
  6. Bake the cookies: Bake for 10-12 minutes or until the edges are set and slightly firm but the jam is bubbly. Avoid overbaking to keep cookies soft.
  7. Cool the cookies: Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a more intense ginger flavor, you can add an extra 1/2 teaspoon of ground ginger.
  • Use store-bought cranberry jam or homemade cranberry sauce reduced until thickened for best results.
  • Store cookies in an airtight container at room temperature for up to a week.
  • These cookies freeze well; freeze baked cookies for up to 3 months, thaw before serving.
  • To make the thumbprint indentation easier, slightly dampen your thumb or spoon.
