This Greek Chicken Gyros recipe features juicy marinated chicken thighs cooked to crispy perfection alongside homemade air-fried potato wedges. Chicken Marinade

  • 2 chicken thighs (skinless and boneless), sliced into chunks
  • 1 tsp garlic, minced
  • 1/2 tbsp mixed herbs
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 lemon, juiced
  • 1 tbsp olive oil

Potato Wedges

  • 2 large potatoes, sliced into 1cm thick wedges
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Tzatziki Sauce

  • 2 tbsp Greek yoghurt
  • 1/2 cucumber, grated and squeezed to remove any water
  • 2 tsp garlic, minced
  • 1/2 lemon, juiced
  • 1 tsp salt
  • 1 tsp black pepper

Additional Ingredients

  • 1 large flatbread (or two medium-sized flatbreads, preferably garlic and herb flavored)
  • 1 tomato, cut into 6 wedges
  • 1/2 red onion, sliced
  • Small bunch of parsley, roughly chopped

Instructions

  1. Marinate the Chicken: Combine the chicken chunks with minced garlic, mixed herbs, salt, black pepper, lemon juice, and olive oil. Mix well and let it marinate for 20 minutes to absorb all the flavors.
  2. Prepare Potato Wedges: Slice the potatoes into 1cm thick wedges. Toss them evenly with olive oil, salt, and black pepper to season well.
  3. Air Fry Potatoes: Place the seasoned potato wedges into one compartment of the Ninja Foodi Air Fryer.
  4. Skewer the Chicken: Thread the marinated chicken pieces onto two skewers and position them in the other compartment of the air fryer.
  5. Cook Chicken and Potatoes: Set the Ninja Foodi Air Fryer to 200°C (390°F) and cook for 16 minutes using the MATCH feature so both compartments finish simultaneously. Turn both the chicken skewers and potato wedges halfway through cooking to ensure even crispiness and doneness.
  6. Remove Chicken from Skewers: Carefully slice the cooked chicken off the skewers into small chunky pieces, perfect for assembling your gyros.
  7. Prepare Tzatziki Sauce: In a bowl, mix the Greek yoghurt, grated and well-squeezed cucumber, minced garlic, lemon juice, salt, and black pepper. Adjust seasoning to taste.
  8. Prepare Vegetables: Chop the red onion, tomato wedges, and roughly chop the parsley for fresh toppings.
  9. Assemble the Gyros: Lightly warm or toast the flatbread. Spread a layer of tzatziki on the flatbread, add the cooked chicken pieces, air-fried potato wedges, tomato, red onion, parsley, and a bit more tzatziki. Roll up the flatbread tightly, using baking paper if needed to hold its shape, and serve immediately.

Notes

  • Make sure to squeeze the grated cucumber very well to avoid watery tzatziki.
  • If you don’t have a Ninja Foodi Air Fryer, regular air fryers or oven baking at 200°C for about 20 minutes for chicken and potatoes alternately will work.
  • You can substitute chicken thighs for chicken breasts but the thighs tend to be juicier and more flavorful here.
  • Using garlic and herb flatbread adds an extra burst of flavor, but plain flatbread works fine too.
  • Serve with extra tzatziki on the side for dipping or spreading.
