Ingredients

Scale

For the Salmon:

  • 2 lbs salmon fillets (skin on or off)
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp ancho chili powder
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp onion powder
  • 1 tsp ground black pepper

For the Avocado Salsa:

  • 1 avocado (cubed)
  • ½ red onion (sliced or diced)
  • 2 limes (juiced)
  • 1 tbsp chopped fresh cilantro

Instructions

  1. Prepare the Seasoning: In a small bowl, mix together the kosher salt, ancho chili powder, ground cumin, ground paprika, onion powder, and ground black pepper until well combined.
  2. Season the Salmon: Rub the salmon fillets evenly with olive oil, then coat them with the prepared seasoning mix, ensuring all sides are covered for maximum flavor.
  3. Chill the Salmon: Place the seasoned salmon in the refrigerator and let it chill for at least 30 minutes to allow the flavors to penetrate the fish.
  4. Make the Avocado Salsa: In a separate bowl, combine the cubed avocado, sliced or diced red onion, freshly squeezed lime juice, and chopped cilantro. Stir gently to blend the flavors and chill until serving.
  5. Preheat the Grill: Heat your grill to medium, between 350°F and 375°F, to prepare for grilling the salmon.
  6. Grill the Salmon: Place the salmon fillets on the grill and cook for about 3-4 minutes per side, or until the salmon reaches your preferred level of doneness and has nice grill marks.
  7. Serve: Remove the salmon from the grill, top each fillet generously with the fresh avocado salsa, and serve immediately for a delightful meal.

Notes

  • You can use salmon with or without skin based on your preference; skin-on helps keep the fish moist.
  • For an extra smoky flavor, consider using charcoal or wood chips on your grill.
  • If you don’t have a grill, you can use a grill pan or broil the salmon in the oven.
  • Make the avocado salsa fresh, just before serving, to prevent the avocado from browning.
  • Adjust the chili powder amount based on your preferred spice level.
