Ground Turkey Mixture

  • 3 Tbsp soy sauce (low sodium)
  • 12 Tbsp sriracha
  • 23 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt (more or less to taste)
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha (more to taste)
  • 1 tsp rice vinegar
  • 2 tsp honey

For Serving

  • Cooked rice
  • Shredded carrots
  • Sliced cucumbers
  • Shelled edamame
  • Pickled onions
  • Avocado
  • Shredded cabbage
  • Sliced green onion
  • Sesame seeds

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Adjust the spice level by adding more sriracha for heat or more honey/sweet chili sauce to mellow the flavor. Chill the sauce until ready to serve.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat until shimmering. Add ground turkey and break it into smaller pieces with a spatula. Cook until the turkey is browned and reaches an internal temperature of 165°F (74°C).
  3. Simmer and Season: Reduce heat to medium-low. Add minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt to the skillet. Stir to combine and let simmer for 2-3 minutes, stirring occasionally.
  4. Thicken Mixture: Sprinkle corn starch evenly over the turkey mixture and stir well to thicken the sauce. Optionally, stir in about 2 tablespoons of the prepared bang bang sauce into the turkey mixture just before serving for extra flavor.
  5. Assemble Rice Bowls: Build bowls by layering cooked rice and your choice of shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, shredded cabbage, and other favorite vegetables. Spoon the ground turkey mixture over the rice and drizzle with additional bang bang sauce. Garnish with sliced green onions and sesame seeds to finish.
