Instructions

  1. Mix Ingredients: In a medium saucepan, combine the coconut milk, sugar, and cornstarch. Whisk them together until the cornstarch is fully dissolved to prevent lumps.
  2. Cook Mixture: Place the saucepan over medium heat and cook, stirring constantly with a whisk or wooden spoon. Continue cooking until the mixture thickens considerably and starts to bubble gently, around 6–8 minutes.
  3. Add Vanilla: Remove the saucepan from heat, and stir in the vanilla extract thoroughly.
  4. Pour and Chill: Immediately pour the thickened pudding into a square or rectangular pan lined with plastic wrap or lightly greased. Smooth the surface with a spatula, then cover and refrigerate for at least 3–4 hours, or until fully set and firm.
