Coleslaw Base

  • 1 (15-ounce) can crushed pineapple, drained

Dressing

  • 1 tablespoon apple cider vinegar
  • 1/2 cup mayonnaise
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Make the dressing: In a bowl, whisk together apple cider vinegar, mayonnaise, chopped cilantro, and a few shakes of salt until smooth and well combined.
  2. Combine coleslaw mix and pineapple: In a large serving bowl or a Tupperware-style storage container, mix together the drained crushed pineapple, coleslaw mix, and additional chopped cilantro to evenly distribute the flavors.
  3. Add dressing and season: Pour the prepared dressing over the coleslaw mixture and toss gently to combine all ingredients thoroughly. Sprinkle several turns of freshly ground black pepper over the top. Taste and adjust salt and pepper seasoning as needed.
  4. Chill and serve: For the best flavor, refrigerate the coleslaw for a few hours to allow the flavors to meld beautifully. Although ideal when eaten the same day, it can be kept chilled for later use.
