Instructions

  1. Prepare the cherries: Rinse fresh cherries under cold water, then pit them carefully. If using frozen cherries, thaw and drain any excess liquid.
  2. Cook the cherries with sugar: In a medium saucepan over medium heat, combine the cherries and sugar. Stir occasionally and cook until the cherries release their juices and the mixture is heated through, about 5-7 minutes.
  3. Thicken the filling: In a small bowl, mix the cornstarch with a little cold water to create a slurry. Slowly pour the slurry into the cherry mixture while stirring constantly. Continue to cook for 2-3 minutes more until the filling thickens and becomes glossy.
  4. Add lemon juice and cool: Remove the saucepan from heat and stir in the fresh lemon juice to balance the sweetness. Let the filling cool to room temperature before using it in your pie or other desserts. Cooling helps the filling set properly.
