Ingredients

Scale

Meat Mixture

  • 12 lbs ground chuck
  • 1 small onion, chopped
  • 67 cloves garlic, chopped
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper, to taste
  • 1 (15 oz) can Manwich Original
  • 1 (15 oz) can Manwich Bold

Jiffy Corn Muffin Topping

  • 2 boxes Jiffy Mix (8.5 oz each)
  • 2 eggs
  • 1 cup milk
  • 2 cups shredded cheddar jack cheese
  • 1/4 cup shredded cheddar cheese (for topping)

Instructions

  1. Brown the Meat: In a cast iron skillet, brown the ground chuck over medium heat, breaking it up with a meat masher. Add chopped onion, minced garlic, garlic powder, smoked paprika, cayenne pepper, salt, and pepper. Cook until the meat is fully browned and fragrant.
  2. Prepare Jiffy Mixture: While the meat is browning, in a bowl, combine the two boxes of Jiffy Mix, milk, and eggs. Using an electric mixer, blend just until incorporated. Then fold in 2 cups of shredded cheddar jack cheese. Set aside.
  3. Add Manwich Sauce: Once the meat is browned, stir in both cans of Manwich (Original and Bold). Mix thoroughly and bring the mixture to a boil, then reduce heat to medium-low to simmer.
  4. Simmer the Meat Mixture: Let the meat and Manwich sauce simmer for about 5 minutes to allow flavors to meld. Taste and adjust seasoning if necessary.
  5. Assemble the Casserole: Using an ice cream scoop, evenly distribute the prepared Jiffy batter over the meat mixture in the skillet. Smooth the top with a knife if desired.
  6. Add Cheese Topping and Bake: Sprinkle the 1/4 cup shredded cheddar cheese over the Jiffy mixture. Transfer the skillet to a preheated oven at 350°F (175°C) and bake for 35-40 minutes until the topping is golden and set.
  7. Rest and Serve: Remove from oven and let the casserole rest for 10 minutes before serving to allow it to set and flavors to develop. Enjoy your delicious Jiffy Joe!

Notes

  • If you don’t have a cast iron skillet that’s oven-safe, transfer the cooked meat mixture to a baking dish before adding the Jiffy batter and baking.
  • You can adjust the spice level by modifying the amount of cayenne pepper or using only one type of Manwich sauce.
  • Leftovers keep well refrigerated for 3-4 days and can be reheated in the oven or microwave.
  • For a variation, try adding diced green chilies or jalapeño to the meat mixture for added heat.
  • Use sharp cheddar for a stronger cheese flavor or a blend of cheeses according to preference.
