Meatballs
- 1 lb ground beef (or mixed ground pork and beef)
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 egg
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper, to taste
Korean BBQ Sauce
- 1/2 cup Korean BBQ sauce (store-bought or homemade)
Spicy Mayo Dip
- 1/2 cup mayonnaise
- 1–2 tablespoons gochujang (Korean chili paste)
- 1 teaspoon lime juice
- Prepare the Meatball Mixture: In a large mixing bowl, combine ground meat, breadcrumbs, chopped onion, minced garlic, egg, soy sauce, grated ginger, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Form Meatballs: Shape the mixture into 1 to 1.5-inch meatballs and place them on a baking sheet lined with parchment paper or lightly greased.
- Bake the Meatballs: Preheat your oven to 400°F (200°C). Bake the meatballs for 15-20 minutes, or until they are cooked through and golden brown on the outside.
- Coat with Korean BBQ Sauce: Remove the meatballs from the oven and immediately toss them in the Korean BBQ sauce until evenly coated.
- Prepare Spicy Mayo Dip: In a small bowl, mix the mayonnaise, gochujang, and lime juice until smooth.
- Serve: Arrange the glazed meatballs on a serving platter alongside the spicy mayo for dipping. Enjoy warm.
Notes
- For a leaner option, use ground turkey or chicken instead of beef.
- If you prefer less heat, reduce the amount of gochujang in the spicy mayo.
- These meatballs can be made ahead and reheated in the oven to maintain crispiness.
- To make it gluten-free, substitute breadcrumbs with gluten-free breadcrumbs.
