Ingredients

Scale

Meatballs

  • 1 lb ground beef (or mixed ground pork and beef)
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper, to taste

Korean BBQ Sauce

  • 1/2 cup Korean BBQ sauce (store-bought or homemade)

Spicy Mayo Dip

  • 1/2 cup mayonnaise
  • 12 tablespoons gochujang (Korean chili paste)
  • 1 teaspoon lime juice

Instructions

  1. Prepare the Meatball Mixture: In a large mixing bowl, combine ground meat, breadcrumbs, chopped onion, minced garlic, egg, soy sauce, grated ginger, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated.
  2. Form Meatballs: Shape the mixture into 1 to 1.5-inch meatballs and place them on a baking sheet lined with parchment paper or lightly greased.
  3. Bake the Meatballs: Preheat your oven to 400°F (200°C). Bake the meatballs for 15-20 minutes, or until they are cooked through and golden brown on the outside.
  4. Coat with Korean BBQ Sauce: Remove the meatballs from the oven and immediately toss them in the Korean BBQ sauce until evenly coated.
  5. Prepare Spicy Mayo Dip: In a small bowl, mix the mayonnaise, gochujang, and lime juice until smooth.
  6. Serve: Arrange the glazed meatballs on a serving platter alongside the spicy mayo for dipping. Enjoy warm.

Notes

  • For a leaner option, use ground turkey or chicken instead of beef.
  • If you prefer less heat, reduce the amount of gochujang in the spicy mayo.
  • These meatballs can be made ahead and reheated in the oven to maintain crispiness.
  • To make it gluten-free, substitute breadcrumbs with gluten-free breadcrumbs.
