  • 1 lemon, zest and juice

For Garnish

  • 4 oz burrata cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to package instructions, usually about 8-10 minutes. Drain the pasta and set aside, reserving some pasta water.
  2. Prepare the Chicken: While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Cook chicken about 5-6 minutes per side or until fully cooked and golden brown on the outside. Remove from heat, let rest for a few minutes, and slice into strips.
  3. Make the Lemon Butter Sauce: In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant but not browned. Stir in lemon zest and lemon juice. Season with salt and pepper. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
  4. Toss Pasta in Sauce: Add cooked spaghetti directly into the skillet with lemon butter sauce. Toss well to coat all pasta evenly, warming it through for 1-2 minutes.
  5. Assemble and Serve: Transfer the coated spaghetti to serving plates or a large platter. Arrange sliced chicken on top. Tear or spoon burrata cheese over the pasta and chicken. Garnish with chopped fresh parsley if desired and serve immediately.
