Chicken
- 2 boneless, skinless chicken breasts (about 6–8 ounces each)
For the Sauce
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped (preferably packed in oil, drained)
- 1 cup heavy cream
- 2 cups fresh spinach
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- Prepare and Season the Chicken: Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper to enhance the flavor before cooking.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side until they develop a golden-brown crust and are nearly cooked through. Remove the chicken from the skillet and set aside.
- Make the Creamy Sauce: In the same skillet, reduce heat to medium. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped sun-dried tomatoes and stir for one minute to release their flavor.
- Add Cream and Simmer: Pour in the heavy cream, stirring to combine with the garlic and tomatoes. Allow the sauce to simmer gently for 3-5 minutes until it thickens slightly.
- Add Spinach and Return Chicken: Stir in the fresh spinach, cooking until it wilts into the creamy sauce. Return the seared chicken breasts to the skillet, coating them with the sauce. Simmer for an additional 3-4 minutes to ensure the chicken is fully cooked and flavors meld together.
- Serve Hot: Remove from heat and serve the Tuscan chicken immediately, spooning extra creamy sauce over the top for a delicious, low-carb meal.
Notes
- Use chicken thighs if preferred, but adjust cooking time accordingly as they may take longer to cook.
- Sun-dried tomatoes packed in oil add more flavor; if using dry-packed, consider adding a bit more olive oil.
- For a lighter version, substitute heavy cream with half-and-half, but the sauce will be less thick and rich.
- Feel free to add a sprinkle of Parmesan cheese on top before serving for extra flavor.
- Serve with cauliflower rice or steamed vegetables to keep the dish low-carb.
