Base
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 cup ripe mango puree (from fresh mangoes)
Lime Glaze
- 1 cup powdered sugar
- 2 tablespoons fresh lime juice
- Zest of 1 lime
- Prepare the base: Preheat your oven to 350°F (175°C). In a mixing bowl, cream the softened butter and sugar until light and fluffy. Gradually add the flour and mix until combined. Fold in the fresh mango puree evenly to create a smooth batter.
- Bake the mango base: Pour the batter into a greased 9×9 inch baking pan and spread evenly. Bake in the preheated oven for 30-35 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Make the lime glaze: While the bars are baking, whisk together the powdered sugar, fresh lime juice, and lime zest until the glaze is smooth and pourable.
- Top with lime glaze: Remove the mango bars from the oven and let them cool completely in the pan. Once cooled, spread the lime glaze evenly over the top. Allow the glaze to set for about 15-20 minutes before slicing into bars.
Notes
- Use ripe, juicy mangoes for the best flavor and natural sweetness.
- Ensure the mango bars are fully cooled before glazing to prevent the glaze from melting.
- You can add a pinch of salt to the base batter to enhance flavor.
- Store the mango bars in an airtight container in the refrigerator for up to 4 days.
