Chicken and Coating

  • 2 tbsp olive oil
  • 2 chicken breasts
  • 50g all purpose flour

Broth and Sauce

  • 3 garlic cloves, minced
  • 8 sun-dried tomatoes, sliced
  • 1/2 tbsp smoked paprika
  • 1/2 tbsp oregano
  • 1/2 tbsp chilli flakes
  • 600ml chicken stock, divided
  • 300ml single cream
  • 2 tbsp grated parmesan, plus extra for garnish
  • 1/2 tsp ground pepper
  • 1/2 tsp flaky salt
  • 1/2 tsp sugar

Noodles and Toppings

  • 200g ramen noodles
  • Coriander (fresh, for garnish)
  • Beansprouts (for garnish)
  • Edamame beans (shelled, for garnish)
  • Spring onion (sliced, for garnish)
  • Chilli oil (to drizzle)

Instructions

  1. Coat and Fry Chicken: Pour the all purpose flour onto a plate. Coat each chicken breast evenly with the flour. Heat 2 tablespoons of olive oil in a saucepan over medium heat. Fry the chicken breasts for about 4 minutes on each side, or until they turn golden brown. Remove the chicken from the pan and set aside.
  2. Prepare Sauce Base: Using the same saucepan, add minced garlic, sliced sun-dried tomatoes, smoked paprika, chilli flakes, and oregano. Fry the ingredients together for a couple of minutes to release their flavors.
  3. Add Liquids and Parmesan: Pour in 300ml of chicken stock and 300ml of single cream to the pan, stirring well to combine. Grate in 2 tablespoons of parmesan cheese, stirring until melted and incorporated.
  4. Simmer Chicken in Sauce: Return the chicken breasts to the saucepan. Cover the pan with a lid and simmer for 5 minutes to cook the chicken through and infuse it with the sauce flavors. Then remove the chicken again and set aside to slice.
  5. Season Broth and Cook Noodles: Season the broth with flaky salt, ground pepper, and 1/2 teaspoon of sugar. Taste and adjust seasoning if needed. Add the remaining 300ml chicken stock. Add the ramen noodles and cook according to the package instructions, stirring frequently to prevent sticking.
  6. Assemble and Serve: Once the noodles have cooked, ladle the broth and noodles into two serving bowls. Top each bowl with sliced chicken, fresh coriander, beansprouts, edamame beans, sliced spring onions, and a drizzle of chilli oil. Garnish with extra grated parmesan if desired and serve immediately.

  • For extra heat, increase the amount of chilli flakes or drizzle with more chilli oil.
  • You can substitute chicken breasts with thighs for a richer flavor and juicier texture.
  • Use gluten-free flour if avoiding gluten.
