Instructions

  1. Prepare the Cookie Dough: In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, beat the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing well. Gradually incorporate the dry ingredients until a dough forms.
  2. Divide the Dough: Split the cookie dough into three equal parts. To one portion, mix in the cocoa powder and vanilla extract until evenly combined for the chocolate layer. To another portion, fold in the strawberry flavoring and optional freeze-dried strawberries for the strawberry layer. Leave the last portion plain for the classic sugar cookie layer.
  3. Layer the Dough in the Pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper. Press the plain cookie dough evenly into the bottom of the pan. Next, press the cocoa chocolate dough carefully over the plain dough to create the chocolate layer. Finally, spread the strawberry dough layer over the chocolate, smoothing the top evenly.
