Dip Ingredients

  • 1 cup fresh or frozen peas
  • 1/4 cup fresh mint leaves, packed
  • 1 small red chilli, deseeded for less heat
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare Ingredients: If using frozen peas, thaw them first by running under warm water or microwaving briefly. Rinse fresh mint leaves and roughly chop the chilli after deseeding if you prefer less heat.
  2. Blend Ingredients: Add peas, mint leaves, chilli, and olive oil to a blender or food processor. Season with salt and black pepper according to your taste.
  3. Process to Smoothness: Blend all ingredients on high speed until the mixture is smooth and creamy. Scrape down the sides as needed to ensure even blending.
  4. Adjust Seasoning and Serve: Taste the dip and adjust salt or chilli quantities if necessary. Serve immediately or chill in the refrigerator for up to 2 days to deepen flavors.

Notes

  • Use fresh peas for a sweeter taste; frozen peas work well if fresh are unavailable.
  • Adjust the amount of chilli to control the spice level.
  • This dip pairs well with crackers, grilled meats, or as a sandwich spread.
  • Store leftovers in an airtight container in the fridge for up to 2 days.
