Fruit Layer
- 4 ripe peaches, peeled, pitted, and sliced
- 1/4 cup unsalted butter
- 1/2 cup granulated sugar
Cake Batter
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Prepare Peach Layer: Preheat oven to 350°F (175°C). Melt the 1/4 cup butter in a 9-inch round cake pan over low heat. Sprinkle 1/2 cup granulated sugar evenly over the melted butter. Arrange the sliced peaches neatly over the sugar and butter mixture in a single layer.
- Make Cake Batter: In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream the 1/2 cup softened butter with 1 cup sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients, mixing until just combined.
- Assemble and Bake: Gently pour the cake batter over the arranged peaches in the cake pan, spreading evenly without disturbing the peach layer. Place the pan in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Invert: Remove the cake from the oven and allow it to cool in the pan for 10-15 minutes. Run a knife around the edges to loosen the cake, then carefully invert it onto a serving plate so the peach layer is on top.
- Serve: Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.
Notes
- Use ripe but firm peaches for best results to hold their shape during baking.
- If fresh peaches are not available, frozen sliced peaches (thawed and drained) can be used.
- Butter the pan well to ensure easy flipping of the cake.
- Allow the cake to cool slightly before inverting to avoid breaking.
- This cake can be served warm or chilled; reheating slightly warms the caramel topping beautifully.
