Ingredients
- 12 mini sweet peppers, halved and seeded
- 1 cup shredded mozzarella cheese
- 24 slices of mini pepperoni or regular pepperoni cut into smaller pieces
- Prepare the Peppers: Wash the mini peppers thoroughly, then slice each in half lengthwise and remove the seeds and membranes to create hollow pockets for stuffing.
- Stuff the Peppers: Fill each pepper half with a generous amount of shredded mozzarella cheese and place 2 slices of mini pepperoni or equivalent pieces on top of the cheese inside the pepper.
- Bake: Preheat your oven to 375°F (190°C). Arrange the stuffed peppers on a baking sheet lined with parchment paper or a silicone mat. Bake for 10-12 minutes or until the mozzarella cheese has melted and is bubbly.
- Serve: Remove from the oven and let cool for a couple of minutes before serving. Enjoy warm as a flavorful appetizer or snack.
Notes
- You can use regular-sized pepperoni slices by cutting them into smaller pieces to fit the mini peppers.
- For added flavor, sprinkle some Italian seasoning or red pepper flakes on top before baking.
- These poppers can also be made ahead and refrigerated; just bake fresh before serving.
- Make sure to remove the seeds from the peppers to prevent bitterness.
