Ingredients

Scale

Filling

  • 1/2 pound thinly sliced beef (such as ribeye or sirloin)
  • 1/2 cup diced onion
  • 1/2 cup diced bell peppers (red, green, or a mix)
  • 1 cup shredded cheese (provolone or mozzarella preferred)
  • 1 tablespoon olive oil or vegetable oil
  • Salt and pepper to taste

Assembly

  • 810 egg roll wrappers
  • 1 beaten egg (for sealing wrappers)

Frying

  • Vegetable oil, for deep frying (enough to submerge egg rolls)

Instructions

  1. Prepare the Filling: Heat oil in a skillet over medium-high heat. Add the thinly sliced beef and cook until browned, about 4-5 minutes. Add diced onions and bell peppers, cooking until softened and fragrant, about 5-6 minutes. Season with salt and pepper. Remove from heat and stir in the shredded cheese until melted and combined.
  2. Wrap the Egg Rolls: Lay an egg roll wrapper on a flat surface with a corner pointing toward you. Spoon about 2 tablespoons of the beef and cheese filling near the bottom corner. Fold the bottom corner over the filling, then fold in the sides and roll tightly away from you. Brush the top corner with the beaten egg to seal. Repeat with remaining wrappers and filling.
  3. Fry the Egg Rolls: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully place egg rolls in the hot oil, frying in batches to avoid overcrowding. Cook until golden brown and crispy, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.

Notes

  • For best results, use thinly sliced ribeye or sirloin for authentic Philly cheesesteak flavor.
  • Ensure oil temperature stays consistent for even frying and crispiness.
  • Serve with ketchup, hot mustard, or cheese sauce for dipping.
  • Can be baked at 400°F for 15-20 minutes as a lower-fat alternative, flipping halfway.
  • Do not overfill egg rolls to prevent bursting during frying.
