For the Pumpkin Custard
- 1 cup pumpkin puree
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/4 teaspoon salt
For the Brûlée Topping
- 2–3 tablespoons granulated sugar
- Prepare the Custard Mixture: In a large mixing bowl, whisk together the pumpkin puree, heavy cream, sugar, eggs, and spices (cinnamon, nutmeg, ginger, cloves) along with salt until fully combined and smooth.
- Pour into Ramekins: Divide the custard mixture evenly into individual ramekins suitable for baking.
- Bake the Custard: Place the ramekins in a baking dish, and add hot water to the dish halfway up the sides of the ramekins to create a water bath. Bake in a preheated oven at 325°F (163°C) for approximately 40 to 45 minutes, or until the custard is set but still slightly jiggly in the center.
- Cool and Chill: Remove ramekins from the water bath, allow to cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.
- Caramelize the Sugar Topping: Just before serving, sprinkle an even layer of granulated sugar on top of each custard. Using a kitchen torch, carefully heat the sugar until it melts and caramelizes forming a crisp, golden-brown crust. Let the topping harden for a minute before serving.
