Instructions

  1. Prepare the Custard Mixture: In a large mixing bowl, whisk together the pumpkin puree, heavy cream, sugar, eggs, and spices (cinnamon, nutmeg, ginger, cloves) along with salt until fully combined and smooth.
  2. Pour into Ramekins: Divide the custard mixture evenly into individual ramekins suitable for baking.
  3. Bake the Custard: Place the ramekins in a baking dish, and add hot water to the dish halfway up the sides of the ramekins to create a water bath. Bake in a preheated oven at 325°F (163°C) for approximately 40 to 45 minutes, or until the custard is set but still slightly jiggly in the center.
  4. Cool and Chill: Remove ramekins from the water bath, allow to cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.
  5. Caramelize the Sugar Topping: Just before serving, sprinkle an even layer of granulated sugar on top of each custard. Using a kitchen torch, carefully heat the sugar until it melts and caramelizes forming a crisp, golden-brown crust. Let the topping harden for a minute before serving.
