Ingredients
- 1 whole head of garlic
- 1/2 cup mayonnaise
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- Roast the garlic: Preheat your oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves, drizzle with a little olive oil, wrap in foil, and roast for about 30-40 minutes until the cloves are soft and golden brown.
- Prepare the aioli: Once the garlic has cooled, squeeze the roasted cloves out of their skins into a blender or food processor. Add the mayonnaise, remaining olive oil, and fresh lemon juice.
- Blend the ingredients: Blend everything together until smooth and creamy. Taste and adjust seasoning if needed, adding salt or more lemon juice to preference.
Notes
- You can substitute mayonnaise with a vegan mayo for a vegan version.
- Make sure the garlic is fully roasted for a mellow, sweet flavor without harshness.
- Store the aioli covered in the refrigerator for up to one week.
- This aioli pairs wonderfully with grilled meats, roasted vegetables, or as a sandwich spread.
