  • Salt, for pasta water

Instructions

  1. Prepare and Roast Tomatoes: Preheat your oven to 400°F (200°C). In a baking dish, toss cherry tomatoes with minced garlic, olive oil, salt, and pepper. Spread them out evenly and roast for 20-25 minutes until the tomatoes are soft and slightly caramelized.
  2. Cook Pasta: While the tomatoes roast, bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain the pasta, reserving some pasta water.
