Pancake Batter
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
Cheese Filling
- 1 cup shredded cheddar cheese
Savory Fillings (choose any)
- 1/2 cup cooked bacon bits
- 1/2 cup sautéed mushrooms
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/4 cup sliced jalapeños (optional)
- Prepare the Pancake Batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk the buttermilk, egg, and melted butter until combined. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.
- Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, about another 1-2 minutes. Remove from the skillet and keep warm.
- Assemble the Tacos: Place a cooked pancake flat on a plate. Sprinkle a generous amount of shredded cheddar cheese over half of the pancake while still warm so the cheese begins to melt. Add your choice of savory fillings such as bacon bits, sautéed mushrooms, tomatoes, green onions, or jalapeños on top of the cheese.
- Fold and Serve: Fold the pancake in half over the fillings to form a taco shape. Serve immediately while the pancake is warm and the cheese is melted for a delicious savory treat.
Notes
- For extra flavor, consider adding herbs like chives or parsley to the pancake batter.
- Use any cheese that melts well, such as Monterey Jack or mozzarella, as a substitute for cheddar.
- Leftover pancake tacos can be reheated in a skillet over low heat to retain crispness.
- Adjust the fillings to your personal preference or use leftovers for a quick meal.
- If you prefer a gluten-free version, substitute the flour with a gluten-free flour blend.
