Shrimp Filling & Assembly

  • 1 tbsp Butter
  • 1½ tbsp All-purpose flour
  • 300 ml Heavy cream
  • 1 tbsp Dill (finely chopped)
  • 450 g Shrimps pre-cooked (cold water)
  • 1 Egg (hard boiled and chopped)
  • Salt and black pepper (to taste)
  • Cheese (your preferred cheese topping, grated)

Instructions

  1. Prepare the Crêpe Batter: In a bowl, whisk together all the crêpe ingredients—flour, eggs, egg yolk, milk, heavy cream, and butter—until smooth. Let the batter rest for at least 30 minutes to an hour at room temperature or refrigerate overnight. This resting time allows the flour to fully hydrate and results in tender crêpes.
  2. Cook the Crêpes: Heat a non-stick frying pan over medium-high heat and add a small amount of butter to melt. Stir the melted butter into the crêpe batter just before cooking. Pour about 50 ml (¼ cup) of batter into the pan’s center, then tilt or swirl the pan to spread the batter thinly and evenly. Cook each crêpe for about 30 seconds to 1 minute on each side until lightly golden. Stack cooked crêpes on a plate and set aside.
  3. Boil the Egg: Boil one egg until hard-cooked (about 10-12 minutes). Peel and roughly chop the egg, then set aside for the filling.
  4. Make the Creamy Shrimp Sauce: In a saucepan, melt 1 tablespoon of butter over medium heat. Stir in 1½ tablespoons of flour and cook briefly to form a roux. Gradually add 300 ml heavy cream while continuously stirring to prevent lumps. Bring the sauce to a boil and cook until thickened, about one minute, stirring constantly to avoid burning.
  5. Add Shrimp and Seasoning: Remove the sauce from heat. Stir in the pre-cooked shrimp, finely chopped dill, and chopped hard-boiled egg. Season the mixture with salt and black pepper to taste, mixing well to combine.
  6. Preheat the Oven: Preheat your oven to 200°C (392°F) to prepare for baking the assembled crêpes.
  7. Assemble the Crêpes: Spoon a generous amount of the shrimp filling into the center of each crêpe. Fold in the short sides over the filling, then roll up the crêpe from one long side to the other, finishing seam-side down to seal.
  8. Add Cheese Topping: Place the filled crêpes seam side down in a greased baking dish. Sprinkle grated cheese evenly over the top of the crêpes for a delicious, golden crust.
  9. Bake: Bake the crêpes in the preheated oven for a few minutes, just until the cheese is melted and golden brown, approximately 5-7 minutes.
