Ingredients

Scale

Main Ingredients

  • 1 lb. ground beef
  • 1 cup white onion, diced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. garlic powder
  • 21.5 oz. cream of mushroom soup (two 10.75 oz. cans, no added water)
  • 15.25 oz. can corn, drained
  • 1 1/2 lbs. russet potatoes (about 5 cups diced, cut into small 1/2 inch cubes, skin on)
  • 2 cups shredded sharp cheese, divided

Instructions

  1. Brown the beef and onion: In a large skillet over medium-high heat, cook the ground beef with the diced onions until the beef is fully browned and the onions are softened. Drain any excess fat to reduce greasiness.
  2. Prepare the slow cooker mixture: Wash and dry the potatoes, then cut them into small 1/2 inch cubes, leaving the skin on for texture and nutrients. Add the diced potatoes into the slow cooker. Pour in the browned beef and onion mixture. Add the cream of mushroom soup, salt, pepper, garlic powder, drained corn, and half of the shredded sharp cheese. Stir well to evenly combine all ingredients then spread the hash into a flat, even layer.
  3. Cook the hash: Cover the slow cooker and cook on the LOW setting for 5 hours. Avoid opening the lid during cooking to ensure proper temperature and cooking time.
  4. Add remaining cheese and melt: After 5 hours of cooking, evenly sprinkle the remaining shredded sharp cheese over the top of the hash. Cover again and let the cheese melt for about 10 minutes before serving.

Notes

  • Do not add water to the cream of mushroom soup to keep the hash thick and creamy.
  • Leaving the potato skins on adds texture and nutritional value.
  • If you prefer a spicier dish, add a pinch of cayenne pepper or smoked paprika along with the other seasonings.
  • Use sharp cheddar or your preferred cheese for melting on top.
  • Reserved cheese halves ensure a cheesy topping as well as melty cheese inside the hash.
