Ingredients

Scale

Meatball Mixture

  • 2 pounds ground turkey (93/7 lean)
  • 1/2 onion, very finely diced or grated
  • 2 tablespoons Greek seasoning (Cavenders or homemade)
  • 2 eggs
  • 1/4 cup bread crumbs
  • 12 ounces frozen spinach, thawed and moisture squeezed out
  • 1 cup crumbled feta cheese

Cooking Oil

  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven: Set your oven to 375˚F (190˚C) to prepare it for baking the meatballs.
  2. Mix ingredients: In a large bowl, combine the ground turkey, finely diced onion, Greek seasoning, eggs, bread crumbs, thawed and drained spinach, crumbled feta cheese, and olive oil. Use your hands to mix everything thoroughly until the ingredients are evenly distributed.
  3. Form meatballs: Shape the turkey mixture into 2-inch diameter balls. Arrange them on a baking sheet making sure to space them about ½ inch apart to allow even cooking.
  4. Bake the meatballs: Place the baking sheet in the preheated oven and bake the meatballs for 15 minutes. Use a meat thermometer to check that the internal temperature of the meatballs has reached 165˚F (74˚C). If they have not, continue baking for an additional 3-5 minutes until fully cooked.
  5. Serve: Enjoy these meatballs warm or cold. They’re versatile and can be used in meal prep, served with salads, in bowls, or inside subs for a satisfying meal.

Notes

  • Be sure to squeeze out excess moisture from the thawed spinach to prevent soggy meatballs.
  • Use a food-safe thermometer to ensure the turkey meatballs reach a safe internal temperature of 165˚F.
  • These meatballs freeze well and can be reheated for quick meals.
  • For a gluten-free version, substitute bread crumbs with gluten-free alternatives.
  • If desired, customize seasoning by adding garlic powder or red pepper flakes for extra flavor.
