Ingredients

Scale

Shortbread Dough

  • 1 cup (227g) unsalted butter, softened
  • 2 cups (240g) all-purpose flour
  • 1/2 cup (100g) granulated sugar

Strawberry Topping

  • 1 cup fresh strawberries, finely chopped
  • 2 tablespoons granulated sugar

Instructions

  1. Prepare the dough: In a large mixing bowl, cream the softened butter with 1/2 cup sugar until light and fluffy. Gradually add the all-purpose flour, mixing until the dough comes together and is smooth.
  2. Form and bake: Press the dough evenly into a greased or parchment-lined baking pan or onto a baking sheet to form the shortbread base. Spread the finely chopped strawberries mixed with 2 tablespoons sugar evenly on top. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the edges are golden brown.
  3. Cool and serve: Remove from the oven and allow the shortbread cookies to cool completely in the pan or on a cooling rack. Once cooled, cut into squares or desired shapes and serve.

Notes

  • Use cold butter to help maintain the dough’s texture if you prefer a crumblier shortbread.
  • For a more intense strawberry flavor, macerate strawberries with sugar for 15 minutes before spreading on the dough.
  • These cookies are best enjoyed within 2 days for optimal freshness but can be stored in an airtight container for up to a week.
